1Wash and dry all produce. Adjust rack to middle position and preheat oven to 425 degrees. Finely chop heirloom grape tomatoes . Trim, then thinly slice scallions . Mince or grate 1 clove garlic . Cut fingerling potatoes in half lengthwise. Zest meyer lemon until you have 1 tsp zest, then halve.
